Ingredients
- 2 medium cucumbers
- 3 tablespoons rice vinegar
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/2 teaspoon finely shredded lime peel
- 1/2 teaspoon grated fresh ginger
- 1/4 teaspoon crushed red pepper
- 2 tablespoons thinly sliced fresh basil
Directions
Halve cucumbers lengthwise. Seed and slice crosswise into 1/4-inch-thick slices. In a medium bowl combine cucumbers, rice vinegar, sugar, salt, lime peel, ginger, and crushed red pepper. Let stand for 15 minutes. Stir in basil. Serve with a slotted spoon.
