Ingredients
- 1 large bunch curly green kale – about 8 firmly packed cups
- 2 1/2 Tbsp cold pressed extra virgin olive oil
- 1/2 cup nutritional yeast (can substitute with 1.5 teaspoons sea salt)
- 3 tsp garlic powder (omit if desired)
- 2 teaspoons soy sauce
Directions
Preheat oven to 350 degrees. Wash and remove stalk from each kale leaf. Add oil and rub into leaves making sure each leaf is coated. Add soy sauce and garlic powder and mix with hands thoroughly. Sprinkle nutritional yeast on kale and lightly toss. Spread 1 layer of kale leaves deep on a baking sheet and bake for 15 to 20 minutes. I like to sprinkle additional nutritional yeast on top of the kale once it is spread on the sheet. The leaves on the outside of the tray cook more quickly. Halfway through baking remove from oven, turn kale over and move outer leaves to center of the sheet and center leaves to outside. Return to oven and bake for remainder of the time. Kale chips should be slightly crunchy. You can brown to your likeness. Remove from oven and enjoy. Kale burns very easily so watch them closely the first time you make them.
