Ingredients
- 1/2 pound radishes, trimmed and grated coarse (about 2 cups)
- 3 cups finely-shredded cabbage
- 1 cup coarsely-grated carrots
- 1/2 cup thinly-sliced red onion (can use scallions instead)
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon sugar, maple syrup, or honey
- 2 tablespoons olive oil
- 2 tablespoons finely-chopped fresh cilantro, mint or parsley leaves
Directions
In a bowl, toss together the radishes, cabbage, carrots, onion, lemon juice, sugar, oil, coriander, and salt and pepper to taste.
